Azia Resort & Spa is excited to announce this year's calendar of our Michelin Star culinary experiences. For special weekends during the summer season, we host Michelin star chefs who emphasise the importance of fresh and local ingredients, which aligns perfectly with the Azia’s vision. Many ingredients will be sourced from the hotel owned plantation of 15000 trees.
8th and 9th of May
Chef Juan Guillamón, from Spain
Juan’s professional career began in the kitchen at London’s Natural History Museum, before training with some of the grand maestros at leading restaurants across Spain. He then worked with the Ferrari Formula 1 racing team, and travelled around the world with them for six years, while also working at a number of restaurants in Spain and Brazil.
In April 2019, he embarked on his personal project, ‘Almo’, right in the heart of Murcia, and reached the final round of Madrid Fusión's ‘Revelation Chef’ competition. Since then, he has earned a Repsol Guide "Sol" award, as well as a Michelin star.
19th and 20th of June
Chef Simon Hulstone, from the United Kingdom
Simon is one of UK’s most decorated chefs having won many prestigious competitions including the Roux scholarship where he now serves as a senior judge. His other accolades include a Michelin star for his restaurant, The Elephant in Torquay which he has maintained for 20 years.
A regular face on British television, Simon has also cooked for the Royal Family and is on the culinary council for Delta Airlines for their first and business class meals worldwide.
10th and 11th of July
Chef Jonas Lagerström, from Sweden
Jonas is a Swedish celebrity chef and entrepreneur who has taken Scandinavian haute cuisine to new heights. After traveling the world, Jonas returned to his homeland to build the restaurant of his dreams, ‘Etoile’.
Jonas challenges the existing rules of running a restaurant and follows a new sustainable way of working and cooking. He challenges his producers and suppliers to be a part of it too, by demanding that their deliveries are smart and sustainable.
It is therefore no surprise that in addition to a Michelin Star, Jonas also proudly holds a Green Michelin Star, an award recognising restaurants leading in sustainable gastronomy.
11th and 12th of September
Chef Manolo Franco – Spain
Manolo took a leap of faith and left his coveted job as a journalist in Formula 1 to return to his roots and take over the former family business. He trained at Le Cordon Bleu and, with the support of a team of experts from some of Spain’s finest restaurants, opened the doors of La Casa de Manolo Franco in 2019.
Manolo focuses on the flavours of the nearby mountains, locally sourced meat, aromatic plants (such as thyme and lavender) that he and his team pick every week.
He was rewarded for his efforts by receiving one Sol in the Repsol Guide in 2023, and has received one Michelin star in the prestigious Michelin Guide every year since 2024.
